After owning the Sunshine Cafe in Silverthorne for nearly two years, owners are looking to make some changes to the long-standing, locally loved brunch spot.
Sunshine Cafe, founded in 1980, is on its sixth owners, the Shillcutts. They recently decided to extend the cafe’s hours to offer dinner. The cafe, which previously served just breakfast and lunch, will now serve dinner from 4-8 p.m.
Owner Casey Shillcutt said the major driving force behind the decision was the closing of Arapahoe Cafe & Pub in Dillon. A-Cafe served as a local watering hole for decades before closing in October. Shillcutt said she did not want the Summit County community to lose another affordable dinner spot, so she and her husband Justin decided their cafe would fill that void.
“Most of the dinner options in the area are all more upscale,” Shillcutt said. “You have to make a reservation, and the price point is higher. … We just wanted to give the locals, mostly in Dillon and Silverthorne, another dinner option.”
Shillcut said Sunshine Cafe will offer dinner every day of the year, except for Thanksgiving and Christmas. She said the dinner menu will be an extension of all the fan-favorites on the lunch menu with a few new items thrown in.
She pointed to the “cowboy ribeye” as one of the stars of the show, which is served with Yukon gold mashed potatoes and sauteed vegetables.
“One of my favorites is the patty melt. It used to be one of our daily specials, and because it’s one of my favorites, I added it back on the menu,” Spillcut said.
The sandwich is a beef or bison patty with cheese, house-made patty melt sauce and caramelized onions on rye bread. Sunshine’s burgers, including the patty melt, range from $16.50 to $18.60
Chili, soups, and salad range from $8.75 to $16.50. Appetizers range from $9 to $16.50. Sandwich plates range from $15 to $18. Entrees range from $15.50 to $29.99. The kids menu has items from $6 to $7.50.
