Fourth St. last week, there hasn\u2019t been a day the Chinese food restaurant wasn\u2019t packed with people at the tables and waiting in line for takeout.<\/p>\n<p>Every night, they\u2019ve sold out of food, said Lin Long, the owner.&nbsp;<\/p>\n<p>In fact, the restaurant has been so popular it is currently only offering dinner service in order to keep up with the demand on a small staff. Long said this is only temporary while they hire more workers.<\/p>\n<p>\u201cWe were leaving at midnight every night, so then we had no choice but to close for lunch so we can prep for dinner,\u201d she explained.<\/p>\n<p>Earlier this spring, the restaurant closed its doors at its former location off US Highway 40 to move into a larger and more reliable space. In the more than four months Pearl Dragon was closed, Long and her family completely redid the interior of the new space.<\/p>\n<p>Its new location can fit five more tables, and the kitchen is twice as big, which is key considering the restaurant staff hand cuts about 200 pounds of meat per day, along with all the vegetables and other ingredients needed for the day.<\/p>\n<p>Long said she\u2019s grateful for all the support from the community and especially people\u2019s patience when it comes to the restaurant being short-staffed.<\/p>\n<div class=\"p402_hide\">\n<figure class=\"wp-block-image\">\n<div class=\"caption-container\"><img decoding=\"async\" src=\"https:\/\/www.skyhinews.com\/wp-content\/uploads\/sites\/9\/2019\/08\/IMG_0966-1024x768.jpg\" alt class=\"wp-image-59601\" srcset=\"https:\/\/www.skyhinews.com\/wp-content\/uploads\/sites\/9\/2019\/08\/IMG_0966-1024x768.jpg 1024w, https:\/\/www.skyhinews.com\/wp-content\/uploads\/sites\/9\/2019\/08\/IMG_0966-300x225.jpg 300w, https:\/\/www.skyhinews.com\/wp-content\/uploads\/sites\/9\/2019\/08\/IMG_0966-768x576.jpg 768w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><figcaption><strong>Pearl Dragon\u2019s new space offers room for up to five more tables and has double the kitchen space of its former location.<\/strong><br \/><em>McKenna Harford \/ <a href=\"mailto:mharford@skyhinews.com\">mharford@skyhinews.com<\/a><\/em><\/figcaption><\/div>\n<\/figure>\n<\/div>\n<p>Talking to patrons in line for a table or to pick up takeout, they were more than willing to wait.<\/p>\n<p>\u201cLin remembers everybody,\u201d said Shelby Peterson, who lives in Grand County. \u201cShe\u2019s always happy and accommodating.
