{"id":1316761,"date":"2019-11-15T16:43:51","date_gmt":"2019-11-15T23:43:51","guid":{"rendered":"https:\/\/www.postindependent.com\/?p=990889"},"modified":"2019-11-15T16:43:51","modified_gmt":"2019-11-15T23:43:51","slug":"sunshine-moons-bakery-celebrates-5-sweet-years-in-glenwood-springs","status":"publish","type":"post","link":"https:\/\/alwaysmountaintime.com\/kske\/local-news\/sunshine-moons-bakery-celebrates-5-sweet-years-in-glenwood-springs\/","title":{"rendered":"Sunshine &amp; Moons bakery celebrates 5 sweet years in Glenwood Springs"},"content":{"rendered":"<figure class=\"wp-block-image p402_hide\">\n<div class=\"caption-container\"> <img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/cdn.postindependent.com\/wp-content\/uploads\/sites\/6\/2019\/11\/IMG_1085-1024x768.jpg\" class=\"attachment-large size-large wp-post-image\" alt srcset=\"https:\/\/cdn.postindependent.com\/wp-content\/uploads\/sites\/6\/2019\/11\/IMG_1085-1024x768.jpg 1024w, https:\/\/cdn.postindependent.com\/wp-content\/uploads\/sites\/6\/2019\/11\/IMG_1085-300x225.jpg 300w, https:\/\/cdn.postindependent.com\/wp-content\/uploads\/sites\/6\/2019\/11\/IMG_1085-768x576.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\"><figcaption><strong>Sunshine &amp; Moons owner and pastry chef Sarah Niebler with a fresh batch of old-fashioned sugar cookies. <\/strong><br \/><em>Matthew Bennett\/Post Independent<\/em><\/figcaption><\/div>\n<\/figure>\n<p>For Sunshine &amp; Moons owner Sarah Niebler, the last five years have been pretty sweet.<\/p>\n<p>Located at 2550 State Highway 82 in Glenwood Springs, the natural\/organic bakery that serves walk-in customers and supplies coffee shops and markets from Aspen to Silt will celebrate its five-year anniversary Saturday.<\/p>\n<p>\u201cI\u2019ve been baking with my mom since I was 2 years old,\u201d Niebler said. \u201cMy mom was a home economics teacher.\u201d<\/p>\n<p>Originally from Jefferson, Wisconsin, Niebler fell in love with the Roaring Fork Valley after working at Whole Foods Market in Basalt where she helped open its bakery, cheese and prepared foods departments.<\/p>\n<p>However, after working more on the management side, it was not long before Niebler wanted to get her hands back in the flour, butter and sugar.<\/p>\n<p>\u201cWe use all organic and we don\u2019t take any diet allergies lightly whatsoever,\u201d Niebler said. \u201cWe have an entire wall of gluten-free flours.\u201d<\/p>\n<p>In addition to holding a degree in culinary arts, Niebler has a bachelor of science in dietetics.<\/p>\n<p>No stranger to diet allergies, Celiac disease runs in Niebler\u2019s family, which further inspired the pastry chef to provide an abundance of gluten-free and vegan options at Sunshine &amp; Moons.<\/p>\n<p>\u201cI always said, if I am going to open up a place, I am going to offer something that people can have,\u2019\u201d Niebler said of her customers with diet allergies.<\/p>\n<p>In fact, since opening in November 2014, Niebler has dedicated one of Sunshine and Moon\u2019s ovens strictly for gluten-free baked goods.<\/p>\n<p>\u201cNothing regular has ever gone in there,\u201d Niebler said.<\/p>\n<p>However, plenty of gluten-free cream cheese brownies, cranberry orange cookies, peach brandy bars, sweet breads and other satisfying treats have come out of Sunshine and Moon\u2019s designated gluten-free oven.<\/p>\n<p>While gluten-free, vegan and low sugar options appear throughout the small bakery\u2019s menu, so do regular items such as chocolate silk pie, red velvet cake and more.<\/p>\n<p>\u201cI don\u2019t have to start super early at the crack of dawn but I\u2019m usually here around 5 a.m.,\u201d Niebler said of her workday. \u201cWe try and have everything as fresh as can be.\u201d<\/p>\n<p>Clearly a labor of love, Niebler and her staff will celebrate five years in business with a special open house event from 11 a.m. to 3 p.m. Saturday at the bakery.<\/p>\n<p>In addition to getting to sample Sunshine and Moon\u2019s holiday menu, Niebler will prepare gluten-free chili and vegan soup for Saturday\u2019s event.<\/p>\n<p>\u201cI can see the progress,\u201d Niebler said. \u201cIt\u2019s great to see your customers that constantly support you, so this is my way of saying thank you.\u201d<\/p>\n<p><em><a href=\"mailto:mabennett@postindependent.com\">mabennett@postindependent.com<\/a><\/em><\/p>\n<p><a href=\"https:\/\/www.postindependent.com\/news\/sunshine-moons-bakery-celebrates-5-sweet-years-in-glenwood-springs\/\" target=\"_blank\" rel=\"noopener noreferrer\">via:: Post Independent<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sunshine &amp; Moons owner and pastry chef Sarah Niebler with a fresh batch of old-fashioned sugar cookies.
