Drinks server takes orders over the phone, bags up food and constantly sanitizes pens, all while adhering to social distancing guidelines.&nbsp;<\/p>\n<p>\u201cIt\u2019s difficult,\u201d Carballo said. \u201cYou don\u2019t feel like you can make as much connection.\u201d<\/p>\n<p>Since March 17, a statewide public health order has prohibited eateries from offering sit-down service in an effort to curb the spread of the novel coronavirus, which causes the disease COVID-19.&nbsp;&nbsp;<\/p>\n<p>Along New Castle\u2019s Main Street, establishments like EAT Bistro &amp; Drinks have had to rely entirely on revenue generated from to-go orders.<\/p>\n<p>Prior to the pandemic, EAT, with the exception of a few soups and desserts, did not offer to-go food.&nbsp;<\/p>\n<p>While Carballo can\u2019t bring hot plates of lobster mac-n-cheese to diners inside, she can still serve customers the hearty entr\u00e9e to go.<\/p>\n<p>\u201cWe\u2019ve been so lucky to have such wonderful patrons that really care about the business and want us to survive,\u201d Carballo said. \u201cI\u2019m just really appreciative that the community has embraced us so much.\u201d<\/p>\n<p><strong>From the Front Range to the service industry\u2019s frontlines<\/strong><\/p>\n<p>In 2010, Carballo decided to trade in Aurora\u2019s hustle and bustle for the Roaring Fork River Valley\u2019s serene settings.&nbsp;<\/p>\n<p>\u201cLiving in this valley, most everybody finds themselves at a restaurant job,\u201d Carballo said.<\/p>\n<p>From waiting tables at The Artisan in Snowmass to bartending at the Woody Creek Tavern, Carballo has earned a living serving others.<\/p>\n<p>\u201cWe get to know people\u2019s lives,\u201d Carballo said. \u201cWhat they\u2019re like, what their kids are like and what their family is like when they bring them in.\u201d<\/p>\n<p>When COVID-19 started appearing in headlines across the country, at first, Carballo didn\u2019t know what to make of the news.<\/p>\n<p>Carballo, who also studies nursing at Colorado Mountain College, took the disease seriously but was unaware of how serious the situation would get.<\/p>\n<p>\u201cI didn\u2019t realize we were going to have to shut down cities, states and countries in order to, sort of, get it under control,\u201d Carballo said. \u201cIn some ways, this virus may show us how important it is to love your neighbor.\u201d<\/p>\n<p><strong>The Offering<\/strong><\/p>\n<p>Carballo originally met EAT\u2019s owners Molly Mogavero and Jeff Ellis while walking her two Australian shepherds through New Castle.<\/p>\n<p>\u201cShe\u2019s just a blessing right now,\u201d Mogavero said of Carballo.&nbsp;<\/p>\n<p>Mogavero and Ellis\u2019 passion for home-cooked meals, handcrafted cocktails and most of all community inspired Carballo to start working at EAT a little over a month ago.<\/p>\n<p>\u201cI adore the whole operation,\u201d Carballo said. \u201cI\u2019ve always appreciated how community-oriented they are.\u201d<\/p>\n<p>Every morning, outside of EAT, Mogavero and Ellis have set out everything from baguettes to quiche for anyone in need during the pandemic.&nbsp;<\/p>\n<p>\u201cMaybe it just puts a smile on someone\u2019s face because it\u2019s homemade and it\u2019s made with love,\u201d Mogavero said. \u201cWe call it the offering.\u201d<\/p>\n<p>Mogavero said that just because grocery stores remain open, doesn\u2019t mean everyone has a paycheck to purchase groceries.&nbsp;<\/p>\n<p>For Mogavero and Ellis, meeting the needs of the community has and always will be EAT Bistro &amp;
