I\u2019m<br \/>\nfrequently running into Nathan in City Market which might be an indication that<br \/>\nhe enjoys cooking as much as I do. He confirmed this by telling me that he<br \/>\noften shares my recipes with his colleagues at Breckenridge Associates Real Estate.<\/p>\n<p>I\u2019d been wandering the aisles wondering if I should make chili for this week\u2019s column. Nathan gave the idea an enthusiastic thumbs-up, mentioning our first snow, football season, autumn leaves and chili\u2019s place as the perfect food for a crowd.<\/p>\n<p>So here you go, Nathan! First up, beef chili made with<br \/>\ndelicious chunks of chuck roast. Next, shredded chicken in a white chili. And<br \/>\nfinally, vegetarian chili with hearty sweet potatoes.<\/p>\n<p>The recipes share similar ingredients, so if you\u2019re cooking<br \/>\nfor a crowd you can easily make all three. Also, with each recipe I\u2019ve offered<br \/>\ntime saving alternatives, such as swapping fresh chicken for store-bought<br \/>\nrotisserie chicken, and ground beef for chuck roast.<\/p>\n<p>All three recipes are made in a slow cooker, so while the chili cooks you can enjoy your friends.<\/p>\n<div class=\"wp-block-media-text alignwide\">\n<figure class=\"wp-block-media-text__media\"><img decoding=\"async\" src=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-2-768x1024.jpg\" alt class=\"wp-image-373090\" srcset=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-2-768x1024.jpg 768w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-2-225x300.jpg 225w\" sizes=\"(max-width: 768px) 100vw, 768px\"><\/figure>\n<div class=\"wp-block-media-text__content\">\n<h3><strong>Chuck Roast Chili in a Slow Cooker<\/strong><\/h3>\n<\/div>\n<\/div>\n<p>Use chuck roast or ground beef (brown ground beef before adding to slow cooker)<\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 pounds chuck roast cut into 2-inch pieces<\/li>\n<li>1 bell pepper diced<\/li>\n<li>1 red onion diced<\/li>\n<li>1 4-ounce can of green chilies<\/li>\n<li>24-ounce can of fire roasted whole tomatoes<\/li>\n<li>1 tablespoon of chili powder<\/li>\n<li>1 tablespoon of ground cumin<\/li>\n<li>1 tablespoon of brown sugar<\/li>\n<li>pinch of salt<\/li>\n<li>2 14-ounce cans kidney beans<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>The ground chuck cubes can be quickly seared before adding to the slow cooker, or not. I usually don\u2019t brown ahead. Put everything into the slow cooker and cook on low for 7 to 8 hours. Once the meat is cooked through, add in the kidney beans, let them warm, taste and adjust seasonings.<\/p>\n<div class=\"wp-block-media-text alignwide has-media-on-the-right\">\n<figure class=\"wp-block-media-text__media\"><img decoding=\"async\" src=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-1-768x1024.jpg\" alt class=\"wp-image-373089\" srcset=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-1-768x1024.jpg 768w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-1-225x300.jpg 225w\" sizes=\"(max-width: 768px) 100vw, 768px\"><\/figure>\n<div class=\"wp-block-media-text__content\">\n<h3><strong>Chicken Chili in a Slow Cooker<\/strong><\/h3>\n<\/div>\n<\/div>\n<p>Use uncooked chicken breast or rotisserie chicken if you\u2019re in a hurry<\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 pound or about three chicken breasts<\/li>\n<li>1 bell pepper diced<\/li>\n<li>1 red onion diced<\/li>\n<li>3-4 cloves garlic<\/li>\n<li>1 4-ounce can of green chilies<\/li>\n<li>2 1\/2 cups of chicken stock<\/li>\n<li>2 cans of cannellini beans drained and rinsed<\/li>\n<li>1 tablespoon cumin&nbsp;<\/li>\n<li>1 cup of water<\/li>\n<li>1 cup of sour cream<\/li>\n<li>1 to 2 tablespoons of corn massa which is a thickener &nbsp;<\/li>\n<li>1 can of Rotel diced tomatoes with green chilis&nbsp;<\/li>\n<li>If you want a more heat add in 1 Tablespoon diced jalape\u00f1os or 1\/8 teaspoon red pepper flakes &nbsp;<\/li>\n<\/ul>\n<p><strong>Directions <\/strong><\/p>\n<p>Into your slow cooker add the three whole chicken breast, the<br \/>\ndiced onion, diced pepper, 2 1\/2 cups of chicken stock, and 3 cloves of garlic.<br \/>\nturn the slow cooker on high and cook for 30 to 45 minutes until the chicken<br \/>\nbreast are cooked through.<\/p>\n<p>Remove the chicken breast and shred into large pieces, then add<br \/>\nback into the slow cooker. &nbsp;Add two cans of cannellini beans that have<br \/>\nbeen rinsed, green chilies, cumin, diced tomatoes, and then in a measuring cup<br \/>\nwhisk together one cup of sour cream and one cup of water with 1- 2 Tablespoons<br \/>\nof masa flour. &nbsp;Then stir this into the slow cooker and turn the heat down<br \/>\nto low and cook for 30 minutes. &nbsp;Garnish<br \/>\nwith cheese, avocados, fresh cilantro.<\/p>\n<div class=\"wp-block-media-text alignwide\">\n<figure class=\"wp-block-media-text__media\"><img decoding=\"async\" src=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-3-768x1024.jpg\" alt class=\"wp-image-373091\" srcset=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-3-768x1024.jpg 768w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2019\/10\/Cooking-SDN-101719-3-225x300.jpg 225w\" sizes=\"(max-width: 768px) 100vw, 768px\"><\/figure>\n<div class=\"wp-block-media-text__content\">\n<h3><strong>Sweet potato and black bean chili in a slow cooker<\/strong><\/h3>\n<\/div>\n<\/div>\n<p>Use sweet potatoes, chunks of fresh pumpkin or your favorite squash<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 large sweet potatoes peeled and cut into one and a half inch chunks<\/li>\n<li>3 \u2013 14-ounce cans of black beans (swap out for your favorite beans)<\/li>\n<li>1 24-ounce can of whole tomatoes<\/li>\n<li>1\/4 teaspoon smoked paprika<\/li>\n<li>1 tablespoon chili powder<\/li>\n<li>1 tablespoon cumin<\/li>\n<li>1 onion diced<\/li>\n<li>1 red bell pepper diced<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>Put all ingredients into a slow cooker and cook on high for 1 hour or low for 3 hours, or until the sweet potatoes are tender.<\/p>\n<p><em>Suzanne Elizabeth Anderson\u2019s column \u201cHome Cooking\u201d publishes biweekly on Thursdays in the Summit Daily News.
