Owning and operating the Cool River Coffee Coffee House
\n& Bakery in Breckenridge has been the dream come true longtime Summit
\nCounty local Diane Burris hoped it would be.<\/p>\n

Burris purchased Cool River from its previous owners three
\nyears ago in November. In the time since, the former manager of the Inxpot
\ncoffee shop in Keystone has made the place her own. The visual touchups have
\nbeen minor \u2014 some new painting and lighting, taking out a drop ceiling and a
\nchange to the logo and signage. It\u2019s Cool River\u2019s menu that has seen more
\nchange.<\/p>\n

Inheriting a shop with a collection of local regulars, a
\nshop known for its quality baked goods, Burris started out by bringing on small
\nbatch local roasters, such as the shop\u2019s main roaster, Huckleberry Roasters of
\nDenver. Cool River also has a rotating tap that features a different roaster
\nevery few weeks.<\/p>\n

\u201cThat\u2019s been my focus,\u201d Burris said. \u201cReally, really good
\ncoffee.\u201d<\/p>\n

On the food side, Burris put out a new menu earlier this
\nsummer after months of preparation. Featuring homemade dishes made from scratch
\nby Burris and the Cool River cooks, Burris said she thinks their homemade pork
\ngreen chili is the best around. Between 7 a.m. and 3 p.m. daily, early or late risers
\ncan eat breakfast or lunch at any time. The options range widely and cater to
\nvarious dietary preferences, from homemade chili, to sweet potato bacon
\nbreakfast tacos to quinoa porridge.<\/p>\n

\u201cThere\u2019s a lot of coffee shops, a lot of restaurants in
\nBreckenridge, so I wanted to find a niche,\u201d Buris said \u201c\u2018What is somebody else
\nnot doing?\u2019 Here, there\u2019s something for everyone, from the vegan to someone
\nlooking for comfort food to the meat eater.\u201d<\/p>\n

Since launching the new menu, Burris said lunch has taken
\noff at Cool River. If you happen to stop by, Burris said she\u2019s confident you\u2019ll
\nfind a coffee house experience that feels like home, with friendly service in
\nprompt fashion.<\/p>\n

\u201cEvery place I\u2019ve ever been, I want it to feel like home,\u201d Burris said. \u201cI want you to be able to come in by yourself and sit at the bar and feel comfortable. I want it to feel like community.\u201d<\/p>\n

Cool River Coffee House is at 325 S. Main St. in Breckenridge.<\/p>\n
