In the time since, the former manager of the Inxpot<br \/>\ncoffee shop in Keystone has made the place her own. The visual touchups have<br \/>\nbeen minor \u2014 some new painting and lighting, taking out a drop ceiling and a<br \/>\nchange to the logo and signage. It\u2019s Cool River\u2019s menu that has seen more<br \/>\nchange.<\/p>\n<p>Inheriting a shop with a collection of local regulars, a<br \/>\nshop known for its quality baked goods, Burris started out by bringing on small<br \/>\nbatch local roasters, such as the shop\u2019s main roaster, Huckleberry Roasters of<br \/>\nDenver. Cool River also has a rotating tap that features a different roaster<br \/>\nevery few weeks.<\/p>\n<p>\u201cThat\u2019s been my focus,\u201d Burris said. \u201cReally, really good<br \/>\ncoffee.\u201d<\/p>\n<p>On the food side, Burris put out a new menu earlier this<br \/>\nsummer after months of preparation. Featuring homemade dishes made from scratch<br \/>\nby Burris and the Cool River cooks, Burris said she thinks their homemade pork<br \/>\ngreen chili is the best around. Between 7 a.m. and 3 p.m. daily, early or late risers<br \/>\ncan eat breakfast or lunch at any time. The options range widely and cater to<br \/>\nvarious dietary preferences, from homemade chili, to sweet potato bacon<br \/>\nbreakfast tacos to quinoa porridge.<\/p>\n<p>\u201cThere\u2019s a lot of coffee shops, a lot of restaurants in<br \/>\nBreckenridge, so I wanted to find a niche,\u201d Buris said \u201c\u2018What is somebody else<br \/>\nnot doing?\u2019 Here, there\u2019s something for everyone, from the vegan to someone<br \/>\nlooking for comfort food to the meat eater.\u201d<\/p>\n<p>Since launching the new menu, Burris said lunch has taken<br \/>\noff at Cool River. If you happen to stop by, Burris said she\u2019s confident you\u2019ll<br \/>\nfind a coffee house experience that feels like home, with friendly service in<br \/>\nprompt fashion.<\/p>\n<p>\u201cEvery place I\u2019ve ever been, I want it to feel like home,\u201d Burris said. \u201cI want you to be able to come in by yourself and sit at the bar and feel comfortable. I want it to feel like community.\u201d<\/p>\n<p>Cool River Coffee House is at 325 S.
