After a 12 month licensing and permit process, Halouvas opened his food trailer, Gyros Delish, in Breckenridge on Jan. 4, 2019.&nbsp;<\/p>\n<p>\u201cI thought there was a demand for a good traditional food,\u201d Halouvas said.<\/p>\n<p>Over the summer of 2019, the trailer was parked in front of Broken Compass Brewing, but will re-open for the winter in the Village Plaza in Breckenridge. Halouvas said he will start having the trailer open on Monday, Nov. 18 to test the current waters and appetite for gyros, but will officially open on Dec. 1.&nbsp;<\/p>\n<p>Halouvas learned to cook Greek food from his mother and specializes in two types of gyros: pork and chicken, which he marinates himself. Gyros Delish also carries a variety of vegetarian meals, including a falafel sandwich. Halouvas said one of his best dishes is his Baklava, which is made with his own homemade syrup. This winter, Halouvas plans to sell a rich, Grecian hot chocolate with churros made from another of his mother\u2019s recipes.<\/p>\n<p>Halouvas said he plans to have the trailer open for five days of the week at first, but he will likely transition to four days per week, Thursday through Sunday, once the ski season picks up so he can get out and ski himself.
