They\u2019re simply good food that I\u2019ve made for myself over the past week. They reflect my desire to cook with whole foods, to eat more vegetables and to create recipes that aren\u2019t too time consuming to get to the table.<\/p>\n<div class=\"p402_hide\">\n<figure class=\"wp-block-image size-large\">\n<div class=\"caption-container\"><img decoding=\"async\" src=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-3-768x1024.jpg\" alt class=\"wp-image-376993\" srcset=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-3-768x1024.jpg 768w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-3-225x300.jpg 225w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-3-1152x1536.jpg 1152w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-3.jpg 1512w\" sizes=\"(max-width: 768px) 100vw, 768px\"><figcaption><strong>Sausage and kale lasagna in white sauce<\/strong><br \/><em>Courtesy Suzanne Anderson<\/em><\/figcaption><\/div>\n<\/figure>\n<\/div>\n<h4><strong>Sausage and kale lasagna in white sauce<\/strong><\/h4>\n<p>Perfect for potlucks, casual dinners with friends or as part of your meal prep.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 box of no cook lasagna noodles<\/li>\n<li>1 pound ground Italian sausage, sweet or hot<\/li>\n<li>1 bunch of kale<\/li>\n<li>1 onion, diced<\/li>\n<li>1\/3 cup flour<\/li>\n<li>1 cup half-and-half or full-fat milk<\/li>\n<li>2 cups chicken stock<\/li>\n<li>6 tablespoons of butter<\/li>\n<li>1 pound mozzarella cheese, shredded<\/li>\n<li>15 ounces ricotta cheese<\/li>\n<li>1 egg<\/li>\n<li>1\/2 teaspoon nutmeg<\/li>\n<li>1 teaspoon Italian seasoning<\/li>\n<li>Red pepper flakes, optional<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>In a large frying pan, fry the sausage until cooked through and remove from pan. In the same pan, cook the chopped kale and one diced onion.<\/p>\n<p>While the sausage and kale are cooking, melt the butter in a large saucepan, add the flour and stir, allowing it to absorb the butter and cook for 2 to 3 minutes.<\/p>\n<p>Gradually add in the half-and-half, chicken stock, nutmeg and Italian seasoning. Bring to a gentle boil. Stir to combine.<\/p>\n<p>In a 13-by-9-inch baking pan, add about half of the white sauce to the bottom of the pan, add three or four lasagna noodles and top with sausage. Add four lasagna noodles, gently spread the ricotta cheese mixture on top, add the kale and another layer of lasagna noodles. Pour the remaining white sauce over the noodles and top with two cups of mozzarella cheese, holding back one cup for the final layering.<\/p>\n<p>Cover with aluminum foil and bake in a 375 degree oven for 40 minutes. I used the leftovers to create a sandwich the next day.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>4 slices each of salami, prosciutto, capicola (or any other meats you enjoy)<\/li>\n<li>1 small head of radicchio, torn into bite-sized pieces<\/li>\n<li>1\/4 pound of hard cheese, sliced or broken into bite-sized pieces<\/li>\n<li>2 cups of baby arugula<\/li>\n<li>1 small bunch parsley leaves, chopped<\/li>\n<li>1-2 tablespoon capers<\/li>\n<\/ul>\n<p><strong>Simple vinaigrette<\/strong><\/p>\n<ul>\n<li>3 tablespoons extra-virgin olive oil<\/li>\n<li>1 tablespoon red wine vinegar<\/li>\n<li>1 teaspoon Dijon mustard<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p>In a large salad bowl, add the salad greens, the meats, cheese, capers and drizzle with the vinaigrette.<\/p>\n<div class=\"p402_hide\">\n<figure class=\"wp-block-image size-large\">\n<div class=\"caption-container\"><img decoding=\"async\" src=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-1-768x1024.jpg\" alt class=\"wp-image-376995\" srcset=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-1-768x1024.jpg 768w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-1-225x300.jpg 225w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-1-1152x1536.jpg 1152w, https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/01\/col-anderson-sdn-010920-1.jpg 1512w\" sizes=\"(max-width: 768px) 100vw, 768px\"><figcaption><strong>Southwestern chickpeas and broccoli over quinoa<\/strong><br \/><em>Courtesy Suzanne Anderson<\/em><\/figcaption><\/div>\n<\/figure>\n<\/div>\n<h4><strong>Southwestern chickpeas and broccoli over quinoa<\/strong><\/h4>\n<p>Sheet pan dinners are popular because they are quick, simple and \u2014 with the right ingredients \u2014 a healthy weeknight option.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 cup uncooked quinoa (or rice, if you prefer)<\/li>\n<li>2 cups water<\/li>\n<li>2 cups broccoli florets<\/li>\n<li>1 14 ounce can of chickpeas drained<\/li>\n<li>1 tablespoon Southwest seasoning<\/li>\n<li>1-2 tablespoons extra-virgin olive oil<\/li>\n<\/ul>\n<p><strong>Tahini dressing<\/strong><\/p>\n<ul>\n<li>1\/3 cup tahini<\/li>\n<li>3 tablespoons lemon juice<\/li>\n<li>3-4 tablespoons water<\/li>\n<li>1 garlic clove, smashed<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p>Cook the quinoa in a rice cooker or on the stove top. Meanwhile, preheat the oven to 400 degrees. On a sheet pan, add the chickpeas and the broccoli and sprinkle with extra-virgin olive oil and then the Southwest seasoning.<\/p>\n<p>Roast the chickpeas and broccoli in the oven for 15-20 minutes, being careful not to overcook.<\/p>\n<p>Create a bowl with your quinoa, topped with broccoli and chickpeas.
