However, several restaurant owners have decided to <a href=\"https:\/\/www.summitdaily.com\/news\/live-updates-takeout-options-from-summit-county-restaurants\/\">continue serving to-go food<\/a> to keep kitchen employees working, pay for expenses like utilities and maintain some sense of \u201cnormalcy\u201d for locals.<\/p>\n<p>TJ Messerschmitt, owner of <a href=\"https:\/\/www.fattyspizzeria.com\/menu\" target=\"_blank\" rel=\"noopener noreferrer\">Fatty\u2019s Pizzeria<\/a><i class=\"fas fa-external-link-alt\"><\/i> in Breckenridge, said he has two reasons to continue takeout operations:<\/p>\n<p>\u201cA: We have the ability to do it. It\u2019s a nice service to the local community here that\u2019s been taking care of us for so many years,\u201d Messerschmitt said.&nbsp;\u201cB: We have kitchen people who \u2026 don\u2019t have the ability to apply for unemployment, so we\u2019re still getting them hours.\u201d<\/p>\n<p>Messerschmitt said the money brought in from takeout business is \u201cjust enough\u201d to help pay for utilities and kitchen staff, which he said amounts to four or five rotating employees.&nbsp;<\/p>\n<div class=\"row\">\n<div class=\"col\">\n<div class=\"row sd-donation sd-donation-mobile p-0\">\n<div class=\"col-xl-4 p-2\">\n<div data-bg=\"url(https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/03\/SDN-logo-white-1.png)\" class=\"p-0 mt-2 mb-2 h-75 text-center rocket-lazyload\"><img decoding=\"async\" src=\"https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/03\/SDN-logo-white-1.png\" class=\"logo m-0 p-0 invisible\"><\/div>\n<\/div>\n<div data-bg=\"url(https:\/\/cdn.summitdaily.com\/wp-content\/uploads\/sites\/2\/2020\/03\/sdn-banner-paypal.jpg)\" class=\"col-xl-8 p-3 text-center rocket-lazyload\">\n<h3 class=\"d-inline mr-3\">Support Local Journalism<\/h3>\n<p><button class=\"btn d-inline\" type=\"button\"><a href=\"https:\/\/www.summitdaily.com\/donate\/?utm_source=article&amp;utm_medium=website&amp;utm_campaign=donation&amp;utm_term=&amp;utm_content=mid-article\">Donate<\/a><\/button><\/div>\n<\/div>\n<p><\/div>\n<\/div>\n<p>\u201cNo matter what you do right now, you\u2019re going to lose money in the restaurant industry,\u201d Messerschmitt said.&nbsp;<\/p>\n<p>Messerschmitt said Fatty\u2019s has a slight advantage in the takeout industry because the pizzeria has always done takeout orders, whereas Relish, another one of Messerschmitt\u2019s restaurants, has closed because he said they are not known for takeout and have not been able to operate on that model. Typically, Messerschmitt said takeout accounts for 5% to 10% of Fatty\u2019s daily sales. Now that takeout is all of his sales, the restaurant is seeing a 90% to 95% drop in business. Messerschmitt said he hopes to stay open throughout the shutdown.<\/p>\n<p><a href=\"https:\/\/sauceontheblue.com\/menu\/\" target=\"_blank\" rel=\"noopener noreferrer\">Sauce on the Blue<\/a><i class=\"fas fa-external-link-alt\"><\/i> managing partner and owner Tim Applegate was adamant that his Silverthorne restaurant would stay open.<\/p>\n<p>\u201cWe will not close,\u201d Applegate said.&nbsp;\u201cEven if I only sell one pizza tomorrow, we will stay open. That is my promise.\u201d<\/p>\n<p>Applegate said he feels staying open is important for the community and for his kitchen employees. He said it\u2019s been heartwarming to see locals repeatedly placing takeout orders and buying gift certificates for future use in support of the restaurant.<\/p>\n<p>\u201cWe\u2019re trying to be there so people can see some kind of consistency, some kind of normalcy,\u201d Applegate said. \u201cAll we can try to do is be ready when things open back up, and they will. We\u2019ll all be back. We\u2019ll all be strong again.\u201d<\/p>\n<p>Frank Michaud, owner and manager of <a href=\"https:\/\/20b45feb-654e-469c-a0e1-e4babb01d02e.filesusr.com\/ugd\/c08bef_4ffc6d2ddfe54078bd781e0d93867de3.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">Chimayo Mexican Grill<\/a><i class=\"fas fa-external-link-alt\"><\/i> in Dillon, said his restaurant sees a lot of local business under normal circumstances, and while he is seeing local support amid the shutdown, Michaud said it is a good day if he can break even. He said he stays open for the local customers and for his employees.&nbsp;<\/p>\n<p>\u201cOur locals want to keep coming in, so we\u2019ve got to do what we can do there, and I\u2019ve got some staff that I\u2019d really like to keep,\u201d Michaud said.<\/p>\n<p>He said the restaurant has seen a few workplace orders from places like Lowe\u2019s, which has helped business. He said that it also helps that Chimayo is set up well for takeout options and is able to operate on lower cost margins.&nbsp;<\/p>\n<p>\u201cWe\u2019re here.
