Yet the totally rebuilt, rebranded Marriott International property\u2014a massive project more than five years in the making, two-and-a-half in construction\u2014is a modern design masterwork that feels breathtakingly brand new.<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">As impressive as the dazzling d\u00e9cor (silver nugget DJ booth! Stairwell street art!) and edgy amenities (\u201cLove Kit\u201d for amorous escapades) are executive chef Jackie Siao\u2019s plans for playful, creative cuisine. Siao will serve cosmopolitan fare in three distinct venues: the Living Room, with dining area, bar and outdoor terrace; 39\u00b0, a cushy, nighttime cocktail \u201cgrotto\u201d tucked into a semi-sunken site where the Sky lounge of the same name was located; and the Wet Deck, an 8,000-square- foot rooftop patio tricked out with heated pool, hot tub, bar, cabanas and stunning 360-degree views of Aspen Mountain and environs.<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">I skipped away from an exclusive behind-the-scenes tour thinking that the W Aspen is a bundle of dynamite sure to blow up our apr\u00e8s-ski scene like a powder bomb. At last, it opens to the public on Thursday, Aug. 29. A few enticing highlights among Siao\u2019s ambitious program of party fuel:<\/p>\n<h4>FIFTEEN PIECES INTERNATIONAL FLAIR\u2014MINIMUM<\/h4>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Siao\u2019s overall culinary theme is \u201cglobally inspired, locally sourced.\u201d Evidence: coconut-kaffir lime-lemongrass green curry meatballs; chicken tikka masala brochettes with cilantro-lime-cumin yogurt; edamame tossed in ginger shoyu with crispy garlic, ginger and a touch of candied orange zest; charred mirin-yuzu prawns with grilled shishito peppers and cucumber pickles; jalape\u00f1o salt-and-vinegar rubbed chicken wings; barbecue-dusted chicharr\u00f3ns with ranch dip. Lunch and dinner entr\u00e9es include the K Bowl (kalbi Korean barbecue short ribs, sticky rice, kimchi, wilted spinach) and the J Bowl (lump crabmeat, ebi shrimp, tuna, sticky rice, sauces, wakame seaweed)\u2014\u201clike a poke bowl on steroids,\u201d Siao quips.<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">NOT-SO-BASIC BREAKFAST<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Sticky buns, cider doughnuts and muffin tops, oh my! \u201cOur continental isn\u2019t exactly a continental\u2014it\u2019s sharable, like an appetizer section, to start the day while socializing before going skiing,\u201d Siao explains. Expect staples\u2014eggs, bacon, potatoes\u2014plus nontraditional offerings by way of a build-your-own hash bowl menu. Plus: coconut milk chia seed porridge. \u201cThe W brand is all about being healthy and at the same time indulging\u2014detox to retox,\u201d Siao adds.<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">TWO BIG BURGERS\u2026AND SHORT-RIB GRILLED CHEESE<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Siao\u2019s Vapor Burger is a double patty with braised short ribs, double cheese, fried onion straws, and bacon. The Fancy Pantsy Burger, only at the Wet Deck, is a wagyu beef patty dosed with liquid Crescenza Brie and Gouda cheeses, maple-pepper bacon, and truffled B\u00e9arnaise sauce. Both are stabbed, heart-attack style, with a steak knife. Meanwhile, Siao\u2019s short-rib grilled cheese on house-made sourdough is filled with American, cheddar, and caramelized onion spread, then encrusted on its exterior with extra cheese.<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">\u2018THE PINK PLATE\u2019<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">\u201cIt\u2019s a mix of everything you crave\u2026a remake of a \u2018Garbage Plate\u2019 out of Rochester (N.Y.),\u201d explains Siao of her nightly special announced via DJ at 10 p.m. in the 39\u00b0 bar and lounge. \u201cI want to do a huge Bavarian pretzel, and in the middle of the holes are a bunch of different dips. Maybe it\u2019s ribs. Maybe it\u2019s a total garbage plate of sausage gravy, chili cheese fries, nachos. And it\u2019s literally on a pink plate.\u201d<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">THE GONDOLA: SEMI-PRIVATE DINING<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Silly hats, surprise boxes, dice games, and physical challenges (pour wine for your group) rule this area of the Living Room, which may be reserved for semi-private dining. Siao practiced the concept last year at the Lodge at Spruce Peak in Stowe, Vermont: \u201cEveryone got into it. We had the silly hats\u2014Viking hats, hotdog hats, cows. There\u2019s interaction among the guests and with staff. It\u2019s a night they won\u2019t forget.\u201d<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">\u2018ANGELS VS. DEVILS\u2019 CHEESE DELIVERY<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">\u201cI\u2019m really excited about the cheese program: cold\/room temperature cheeses versus hot cheeses,\u201d Siao shares. \u201cYou don\u2019t see that (combination) a lot. During apr\u00e8s, this mobile cart with different cheeses from around the world will go from Living Room to 39\u00b0 to Wet Deck.\u201d<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">HOT-BOX SPECIAL OF THE DAY<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">A Traeger wood-pellet smoker grill on the Living Room terrace (former site of Sky Hotel\u2019s pool) will send barbecue scents wafting through the hotel\u2019s accordian glass doors. Servers will mention the day\u2019s \u201chot-box special,\u201d be it hickory-smoked pork shoulder, baby-back ribs or elk-jalapeno sausage sandwiches, the latter prepared with custom links crafted by Colorado Meat Company in Avon.<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">\u2018B VS. F\u2019 BATTLES<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Beverage versus Food: Sommelier LeeAnn Kaufman and chef Siao, who worked together at Chefs Club at the St. Regis Aspen Resort, will go head-to-head in a friendly three-course, four-course, or \u201call-out war\u201d competition, leaving guests to choose who wins each round. \u201cThe food is going to be great,\u201d Siao declares. \u201cWhat makes the experience better is (our) interaction with guests, making it fun.\u201d<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">DIM SUM CARTS + ACTION STATIONS<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Call it instant gratification in the Instagram age: wheeled trays of \u201cplayful, snacky\u201d food will traverse the 39\u00b0 nighttime cocktail lounge. On busy Thursday, Friday or Saturday nights, guests might find a sushi bar, poke bowl station, or raw bar set up. \u201cYou can come up and talk to the chefs and see them making your food,\u201d Siao says. \u201cThat makes people curious.\u201d<\/p>\n<h4>COCKTAIL-SIZED POOL COASTERS<\/h4>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Inflatable flamingo and ducky drink-holders to match adult-size loungers on the Wet Deck\u2014\u2019nuff said!<\/p>\n<h4>\u2018AN ICE CREAM COOKIE SANDWICH THE SIZE OF YOUR FACE\u2019<\/h4>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Siao makes just three frozen dessert sammies per sheet tray, each pressing together homemade salted caramel, chocolate or vanilla ice cream with classic candy. \u201cI did it at the Lodge at Spruce Peak at Stowe,\u201d Siao recalls. \u201cThen we removed it, and there was an all-out riot.\u201d<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">A GROWN-UP ROOT BEER FLOAT<\/p>\n<p class=\"Special Sections-ATW-ATW_Body_Serif\">Served in a beer mug with a shot of Bailey\u2019s, the W Aspen\u2019s buzzy root beer float pays homage to Mr. J.
