{"id":2453144,"date":"2020-01-12T22:48:00","date_gmt":"2020-01-13T05:48:00","guid":{"rendered":"https:\/\/www.aspentimes.com\/news\/frida-authentic-mexican-restaurant-now-open-in-glenwood-springs\/"},"modified":"2020-01-12T22:48:00","modified_gmt":"2020-01-13T05:48:00","slug":"frida-authentic-mexican-restaurant-now-open-in-glenwood-springs","status":"publish","type":"post","link":"https:\/\/alwaysmountaintime.com\/kspn\/local-news\/frida-authentic-mexican-restaurant-now-open-in-glenwood-springs\/","title":{"rendered":"Frida authentic Mexican restaurant now open in Glenwood Springs"},"content":{"rendered":"<div><img decoding=\"async\" src=\"https:\/\/cdn.aspentimes.com\/wp-content\/uploads\/sites\/5\/2020\/01\/frida-gpi-011120-1.jpg\" class=\"ff-og-image-inserted\"><\/div>\n<p class=\"STND-STND BodyText\">Jose Luis Rico has lived in mountain towns and worked in Mexican restaurants for the better part of his life.<\/p>\n<p class=\"STND-STND BodyText\">After owning and operating El Pollo Rico in Carbondale for 16 years, the restauranteur and his wife Emma Rico recently opened their second eatery in the Roaring Fork Valley: Frida Authentic Mexican Food.<\/p>\n<p class=\"STND-STND BodyText\">Located at 1814 Grand Ave., near Sayre Park in Glenwood Springs, Frida welcomes customers for lunch and dinner seven days a week.<\/p>\n<p class=\"STND-STND BodyText\">Raised in Michoacan, Mexico, it was there that Jose Rico learned the ingredients that go into authentic Mexican recipes while working alongside his mother Argelia and father Alberto in their restaurant, Argelia\u2019s Senaduria.<\/p>\n<p class=\"STND-STND BodyText\">\u201cEvery chef has their own taste and their own dishes,\u201d Jose Rico said. \u201cBut, you\u2019re still going to find tacos, carne asada and chile relleno.\u201d<\/p>\n<p class=\"STND-STND BodyText\">Like the colorful dishes that emerge from Frida\u2019s kitchen, the dining area\u2019s flashy booths, flowers and mariachi figurines make for an equally colorful ambiance.<\/p>\n<p class=\"STND-STND BodyText\">After all, Jose and Emma Rico named Frida after legendary Mexican painter Frida Kahlo.<\/p>\n<p class=\"STND-STND BodyText\">\u201c(Frida) is part of our culture,\u201d Jose Rico said. \u201cAnd, we were looking for a name everyone could pronounce.\u201d<\/p>\n<p class=\"STND-STND BodyText\">While Frida\u2019s menu offers an assortment of seafood, steak, chicken, pork and vegetarian options, the Ricos \u2014 throughout their tenure in restaurants \u2014 have never looked past the \u201ceasier dishes.\u201d<\/p>\n<p class=\"STND-STND BodyText\">\u201cIf a customer asks for chile relleno, it\u2019s got to be good. If a customer asks for enchiladas, it\u2019s got to be good,\u201d Jose Rico said.<\/p>\n<p class=\"STND-STND BodyText\">Ironically, the Ricos said chicken enchiladas were the most popular menu item at Frida since the restaurant opened in December.<\/p>\n<p class=\"STND-STND BodyText\">Other customer favorites included: chile relleno, pork and green chili burritos, fajitas, fish tacos, homemade tamales and fried ice cream.<\/p>\n<p class=\"STND-STND BodyText\">\u201cWe\u2019ve been practicing these dishes for 16 years,\u201d Emma Rico said.<\/p>\n<p class=\"STND-STND BodyText\">Additionally, Frida\u2019s bar offers frozen and on-the-rocks margaritas made with specialty tequila and fresh limes.<\/p>\n<p class=\"STND-STND BodyText\">Well aware of the large number of Mexican restaurants already in Glenwood Springs, Rico said he was not looking to compete but instead hoped Frida\u2019s cuisine would complement the city\u2019s already thriving dining culture.<\/p>\n<p class=\"STND-STND BodyText\">\u201cWe have two communities here; we have the Anglo community and the Hispanic community,\u201d Jose Rico said. \u201cWe\u2019ve been working so hard over the years trying to make great food for everybody.\u201d<\/p>\n<p class=\"STND-STND BodyText Tagline\"><a href=\"mailto:mabennett@postindependent.com\">mabennett@postindependent.com<\/a><\/p>\n<p><a href=\"https:\/\/www.aspentimes.com\/news\/frida-authentic-mexican-restaurant-now-open-in-glenwood-springs\/\" target=\"_blank\" rel=\"noopener noreferrer\">via:: The Aspen Times<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Jose Luis Rico has lived in mountain towns and worked in Mexican restaurants for the better part of his life.
